Mother’s Day Celebration with No Cook Cake and Panna Cotta

This post is about the sweet treats I made for Mother’s Day.

The cooking was all done with love, and I was really sweating it out in the kitchen because of the summer heat. But that didn’t matter and I made my sweets to please (and celebrate) mySELF, my Beloved and my kids.

All the recipes I used are from the Nestle Cream packages and cans, you know, the ones behind the labels on the cans? I’ve improvised with what’s in my kitchen, of course. But a big thanks to Nestle Philippines for the recipes.

For the No Cook Refrigerator Cake, here are the ingredients:

  • A pack of graham crackers (enough to line the bottom of your dish or pan twice)
  • Fruits (or fruit cocktail) – I added canteloupe because we had some in the fridge
  • Condensed or sweetened milk
  • All Purpose Cream (I normally use just the Cream but this was what my Beloved got me)

You make the cake by first lining the bottom of the dish with graham crackers. The first time I tried this recipe years ago the crackers “floated” up the cream-fruit mixture. I learned that I had to chill the cream first for about an hour or two before making the cake to stop this “cracker float” from happening.

In a separate bowl, mix the drained fruit cocktail with the cream and condensed milk. Mix it well so the sweetness gets into everything. Then pour the mixture on top of the graham cracker lining.

Refrigerate to let it set (about 5 hours is good enough). Enjoy!

Now, for the Panna Cotta. I learned this is an Italian treat that means “cooked cream”. My panna cotta looks nothing like the pictures on the can label or the other panna cotta images I’ve seen but they’re good enough for me and my family.

To make the Panna Cotta here are what you need:

1 tablespoon Gelatin

1 teaspoon vanilla

2/3 cups white sugar

2 cups Nestle Cream

1 cup fresh milk

Here’s how to make it: Dissolve the gelatin in fresh milk and let bloom for 5 minutes. While waiting, heat the cream, vanilla and sugar in a saucepan till it simmers. Make sure you don’t let it boil. Turn the heat off and let it cool. Add the gelatin mixture to the cream mixture. Let the whole thing cool before pouring into cups or molds. You can add fruits if you like. Enjoy the sweetness! 

Mother’s Day Cooking with Creamy Shrimp Pasta and Lotsa Sweets

I was the Honorary Chef on Mother’s Day.

My regular cook was on day-off and I didn’t want to join the crowds in the restaurants all over the Metropolis who were also celebrating Mother’s Day. So I had fun making my favorite dish for celebrations – pasta with creamy sauce, this time with shrimps. And for the family’s sweet teeth – refrigerator cake (no cook!) and simplified panna cotta.

For the creamy shrimp pasta, all I needed were the following:

500 grams shrimps – shelled, deveined and cut in half (to make them look more in the sauce and to cook them easily)

2 cans Cream (by Nestle)

1 cup Fresh Milk (also by Nestle)

2 – 3 tablespoons butter

Onions and Garlic (finely chopped)

1 tablespoon dried Basil leaves and Oregano

Salt and pepper to taste

1 tablespoon Extra Virgin Olive Oil

500 grams fettucine noodles (cooked according to package instructions)

It’s very simple to cook:

Saute onions and garlic in olive oil

Add cream and fresh milk, salt and pepper, basil leaves and oregano then the shrimps (don’t forget to stir the cream)

When the shrimps are cooked (they turn pinkish red) the sauce is done.

Add the sauce to your fettuccine and garnish with parsley (my Beloved and kids don’t like it but I just can’t have the pasta without parsley).
